Zingy Strawberry Overnight Oats

 

Ingredients

3/4 cup oat groats (whole oat berries - steel cut oats might work, but I haven’t tried this)

1/4 cup raw almonds

1 cup fresh or frozen strawberries

1/2 cup raisins

2 teaspoons honey

1/8 teaspoon cayenne pepper

1/4 teaspoon cinnamon

pinch sea salt

milk of choice for serving

 

Directions

Soak the oats and almonds for 10-12 hours or overnight in enough water to cover them by 1” then drain and rinse

Put the oats, almonds, strawberries, raisins, honey, cayenne, cinnamon and salt in a food processor and blend about 20-30 seconds, until the oats and almonds are cracked and the ingredients are incorporated. Do not overmix! You don’t want the oatmeal to turn into paste, you want it to still have some texture to it.

 

To serve, top the oatmeal with milk and eat immediately.

 

Store extra oatmeal in a tightly sealed container in the refrigerator for up to 2 days.
