Shamrock Smoothie

 

Ingredients

My go-to smoothie base*:

1/2 cucumber, chopped (and frozen if desired)

1/2 cup frozen cauliflower florets

A few handfuls of baby spinach (or greens of choice)

3 tablespoons hemp seeds

1 cup of milk of choice (I used cashew milk)

Mint-Chocolate flavor additions:

1/2 fresh or frozen banana

3 small or 1 large pitted date

Small handful of fresh mint leaves

1/4 teaspoon mint extract

1 teaspoon vanilla

1 teaspoon mesquite powder (optional) (not to be confused with barbecue mesquite!)

1 tablespoon raw cacao nibs

Directions

Blend all ingredients except for the cacao nibs in a high speed blender (Vitamix) until smooth.  Once everything is creamy, add the cacao nibs and blend just until nibs have broken up a little bit. I like to leave some texture!

*I use this base for most all of my smoothie flavors.  Adding the mint-chocolate ingredients above is one of my favorite versions. However, I've also done other versions for example:

Blueberry: add 3/4 cup frozen blueberries, one banana, 1 teaspoon each cinnamon and vanilla

Pumpkin: add 1/2 cup canned pumpkin, 1/2 banana and 3 small dates, 1 teaspoon each pumpkin pie spice, cinnamon, and vanilla

Experiment with cacao powder, nut butters, coffee, strawberries, etc!
