Gooey Caramel Oatmeal Bars


Oat Mixture

1 cup rolled oats

1 cup gluten-free 1-to1 all purpose flour blend

1/2 cup coconut sugar

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup Nutiva organic shortening

1 egg

2 teaspoons vanilla

1 cup chocolate chips


1/2 cup coconut oil

3/4 cup coconut sugar

1/4 cup maple syrup


Preheat oven to 350. Line an 8 x 8" square baking dish with parchment paper, or use 2 bread pans.

In a large mixing bowl combine all oat mixture ingredients except chocolate chips. Mix until well-combined. The dough will be crumbly. Add chocolate chips.

Press half of mixture evenly into baking dish and bake for 10 minutes.

Meanwhile, prepare the caramel. Combine all the ingredients in a medium saucepan over medium heat. Heat until gently boiling then stir constantly for 5-8 minutes or until thickened. Remove from heat and stir in a sprinkle of salt.

Remove bars from the oven. Pour caramel over top, then crumble on the remaining oatmeal mixture. Bake another 15-20 minutes or until the top is golden. Let cool then cut into bars.
