Oat Bran Muffins with Blueberries

Ingredients

1.5 cups oat bran

1.5 cups gluten-free flour blend (I used Bob's Red Mill)

1 teaspoon baking soda

.5 teaspoon salt

.5 teaspoon cinnamon

1 teaspoon allspice

1 large egg

1.5 cups milk of choice (I used carton coconut) mixed with 1 teaspoon lemon juice

.5 cup combination of honey and molasses

.25 cup oil of choice (I used MCT)

~1 cup blueberries

Directions

 

Preheat oven to 350. Grease or line a 12-muffin tin.

Mix all ingredients together until thoroughly combined. Pour in 12 muffin cups and bake for 15-20 minutes, or until toothpick inserted comes out clean.
