BBQ Chicken Bowl with Mashed Potatoes and Slaw

Ingredients

​

Chicken

3 chicken breasts

1 jar of your favorite BBQ sauce (I used Primal Kitchen unsweetened)

2 teaspoons smoked paprika

1 teaspoon chipotle chili powder

1 teaspoon garlic powder

1/2 cup chicken broth

salt and pepper

Slaw

3 cups shredded cabbage

2 cups steamed or grilled corn

1/2 cup torn cilantro

2 tablespoons chopped chives

​

Dressing

1 avocado, pitted

1/2 cup yogurt (I used plain unsweetened almond milk yogurt)

1 cup cilantro

juice of 1 lime

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

salt

​

Mashed Potatoes

~1 1/2 pounds red potatoes

olive oil and / or ghee

1 teaspoon garlic, minced

1/4 cup yogurt (I used plain unsweetened almond milk yogurt)

splash plain unsweetened almond milk

1 tablespoon chives (optional)

salt and pepper

Directions:​

​

Place chicken breasts, paprika, chili powder, garlic powder, 1 1/2 cups BBQ sauce, broth and a pinch each of salt and pepper into the bowl of your Foodi or Instant. Cover and cook on high pressure/manual for 8 minutes. Once done cooking, use the natural or quick release function and release the steam.

Switch pot to sauté and cook 5 minutes, until the sauce thickens. Shred with two forks.

​

Alternatively, cook for 3-4 hours on high or 6 hours on low in a slow cooker, then shred with two forks.

​

Combine all ingredients for the dressing in a blender and blend until smooth and creamy, adding a bit of almond milk 1 tablespoon at a time, as needed to thin the sauce.

To assemble the slaw, add the cabbage to a bowl with a few spoonfuls of the dressing and toss to combine. Add the corn, cilantro and chives, and season with salt. Place in refrigerator to chill while finishing the rest of the meal prep.

​

Cut the potatoes into large chunks then boil in salted water 10-15 minutes or until soft. Meanwhile, sauté garlic in olive oil or ghee until lightly brown, then remove to a bowl. Drain potatoes when done and add to the bowl with the garlic. Add remaining mashed potato ingredients and mash with a potato masher until desired consistency, adding more milk if too dry.  Season with salt and pepper to taste.

Serve pulled chicken, slaw, and mashed potatoes in a bowl!
