Chocolate Chip Cookies

Ingredients

6 tablespoons firm coconut oil

1 teaspoon molasses (optional)

3/4 cup packed coconut sugar

6 tablespoons cashew butter

1 1/2 teaspoons vanilla extract

1 large egg, room temperature 

1 1/4 cups oat flour

1 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips

Directions

Beat together coconut oil, molasses, coconut sugar, cashew butter vanilla and egg until fluffy. Add oat flour, baking soda, and salt and mix until combined. Stir in chocolate chips.

Place batter in refrigerator for 1 hour.

​

Preheat oven to 350 degrees.

​

Form into 15 cookies on two cookie trays, about 2" between cookies. Press down gently with your palm on each cookie to flatten slightly.

Bake for 12-14 minutes or until edges are slightly browned.
