Blueberry Duff

 

Ingredients

Blueberry Mixture

6 pints blueberries, fresh or frozen

2 cups water

1-2 Tablespoons honey

Squeeze of lemon

Dash of cinnamon & nutmeg

Biscuits

1 3/4 cups gluten free flour blend

1/4 cup potato starch

1 tablespoon baking powder    

1/4 teaspoon baking soda    

1/2 teaspoons salt    

2 Tablespoons coconut sugar

1/2 cup Native organic shortening   

1 cup oat milk

1-2 tablespoons apple cider vinegar or lemon juice

2 Tablespoons honey

Instructions

​

Bring blueberry mixture ingredients to a boil then lower heat.​

​

Mix lemon juice or vinegar into oat milk and let sit.

​

In a large bowl, combine all dry ingredients for biscuits together.  Use a fork or pastry knife to cut in shortening until you have small pebbles.

​

Stir in oat milk and honey until thoroughly combined.

​

Drop biscuits by heaping Tablespoons into blueberry mixture.

​

Let simmer 10 minutes with lid OFF.

​

Then cover and let simmer for 10 more minutes with the lid ON.

​

Scoop out dumplings and cover with blueberry mixture. Best served warm with vanilla ice cream!
