GF Sourdough Cinnamon Rolls​

Ingredients

One recipe GF Sourdough Bread

Date Filling

350g pitted dates

1 tablespoon coconut oil

cinnamon

pinch salt

​

One recipe Cashew Frosting

 

Instructions

Prepare GF Sourdough Bread beginning the morning before you plan to bake your cinnamon rolls.

 

About 30-60 minutes before you plan to mix your final dough, soak dates in warm water that just covers the top of the dates. Set aside for ~20 minutes.

​

Then, place all date paste ingredients in a high speed blender and blend until smooth. You may need to add a bit more water if it's too thick to blend. Adjust cinnamon to taste. Set aside while you mix the dough.

After mixing the dough, cut 2 squares of 15" parchment paper so that you have two sheets of approximately 15"x15."

​

Also prepare a 9x 13" pan or similarly sized round pan.

​

Place one sheet on counter top and dust with a gluten free flour like sorghum or oat. Place mixed sourdough ball on sheet, dust with more flour, then place second sheet of parchment on top of sourdough.

​

Use a large rolling pin to roll out dough to the shape of the parchment paper as precisely as possible.

​

Remove top sheet of parchment. 

​

Spread date paste evenly all the way to all edges of the rolled dough.

​

Roll dough from the bottom edge, carefully removing bottom parchment as you go. Keep the roll as tight as possible as you roll upward into a log.

​

Once log is formed, use a long piece of dental floss to cut into rolls. Slide the dental floss under one end of the log until it is about 1-1.5 inches from the edge. Take the two ends of the dental floss and cross them up over the top of the log then pull tight to cut a slice off the log. Place the roll in the prepared pan and repeat until you have cut the entire log into rolls and all rolls are situated in the pan. Cover the rolls with a clean towel.

Let rolls rise overnight.

​

In the morning, preheat the oven to 475. Bake for 15-20 minutes depending on how thick your rolls turned out. Dough should be cooked through.

​

While rolls are cooling, prepare a recipe of the cashew frosting.

​

Serve rolls warm topped with cashew frosting.

​
