Spiced Chickpeas, Turkey and Greens Over Rice
Ingredients
Rice prepared per package directions
1 tablespoon olive oil
1 pound ground turkey or chicken
1 (16 ounce) can chickpeas drained and patted dry
2-4 cloves garlic, minced
2 shallots, thinly sliced
2 teaspoons ground turmeric
2 teaspoons smoked paprika
Pinch of chipotle chili powder
Salt to taste
2 tablespoons raw sesame seeds
1 bunch greens, such as kale, chard, or spinach, stems removed if necessary, and chopped

handful fresh cilantro, chopped, for serving

Instructions

Heat a skillet over medium heat. Add the oil, ground turkey, chickpeas, garlic, shallots, turmeric, paprika, a pinch of red pepper flakes, and salt. Cook, stirring occasionally until the turkey is cooked through.

Add the sesame seeds and greens, and continue to stir and cook until greens are wilted and cooked to desired amount.

Serve turkey mixture over rice and top with cilantro.
