Easy Chocolate Cake



2/3 cup avocado oil 

2 cups coconut sugar

2 eggs

2 teaspoons vanilla

2 2/3 cup flour of choice (I used Bob's Red Mill 1-to-1 Gluten Free Flour)

2/3 cup raw cacao powder

2 teaspoons baking soda

2 teaspoons baking powder

1 teaspoon salt

2 cups strong hot (decaf) coffee OR boiling water

Optional: chocolate chips


Preheat oven to 350.  Prepare 2 round cake pans or 3 bread pans.

Combine all wet ingredients together. Combine all dry ingredients together.  Add dry ingredients alternately with coffee or boiling water into wet ingredient mixture. Add chocolate chips if desired.


Pour evenly into cake or bread pans and bake for 25-30 minutes. Time will vary depending on your pan size and your oven. Do not overcook!
