Chicken Quinoa Salad with Peanut Dressing

Ingredients

Peanut Dressing

1/2 cup peanut butter

1/4 cup coconut milk

Juice of 2 limes

2 Tablespoons rice vinegar

2 Tablespoons Braggs liquid aminos

1 Tablespoon maple syrup

1 Tablespoon fish sauce

2 cloves garlic, minced

1/4-1/2 teaspoon ground ginger

To Assemble

Greens of choice (I used baby spinach)

Additional veggies: sliced cucumbers, chopped celery, shredded carrot

1 cup cooked quinoa

1/2 cup sliced almonds

1 pound cooked chicken, diced

Handful fresh cilantro, chopped

Instructions

Dressing

Combine all dressing ingredients and whisk until smooth.

​

Bowl

Toss all salad ingredients together with desired amount of dressing and serve immediately. You will probably have extra dressing!
