Bison Meatloaf

 

Ingredients:

avocado oil for sautéing

1 lb ground Bison

1 onion, finely diced

2 carrots, finely diced

2 stalks celery, finely diced

4 cloves garlic, minced

1 egg or 1 Tablespoon chia seeds soaked in 1/4 cup water for an hour

1/3 cup quinoa flakes or bread/cracker crumbs

2 teaspoons Worchestershire sauce

2-4 Tablespoons ketchup

1 teaspoon each sage, oregano, basil, thyme

salt and pepper to taste

fresh parsley to taste

 

Instructions:

Pre-heat oven to 350.  Heat a small amount of avocado oil in a sauté pan and sauté onions until translucent.  Add remaining vegetables, garlic, and herbs except parsley and continue to sauté until fragrant.  Add sauté mixture and all remaining ingredients to large bowl and mix until thoroughly combined using a fork and/or hands.  Transfer to a bread pan and bake for 50-60 minutes until edges are bubbling and meat is thoroughly cooked through.
