Dijon Salmon Burgers

Ingredients

~1 pounds raw salmon, skin removed (half finely chopped, half roughly diced)

1 egg

1/2 bread crumbs (I grated one of my sourdough rolls)

2 tablespoons dijon mustard

1 teaspoon smoked paprika

1 teaspoon dried parsley

1 teaspoon Worcestershire sauce 

1 scallion, chopped

1/2 teaspoon salt

pepper to taste

Instructions

Add all the ingredients to a large bowl and mix with hands until everything is incorporated.  Form the mix into 4 burger patties and place on a plate.


Cover the burgers and chill ~30 minutes. 


Heat a large skillet over medium heat. When hot, coat lightly with oil and add burgers. Cook about 3-4 minutes per side until cooked through. Remove from the skillet. 


Serve with greens on a sourdough roll, or as desired!
